Sam Pottinger has done a great job in updating processing to jdk11, but currently Ben Fry is not showing a great deal of support for his pull request. Sam Pottinger fork works great for me although I’ve not tried application export.
If that is using Sam Pottinger version of processing, he would probably appreciate a report at https://github.com/processing/processing/pull/5753
