Hello,

Check out the methods for the String class:

• String \ Language (API) \ Processing 3+

That answers the String part of the question.

The Processing JAVA version for PC has this:

• launch() \ Language (API) \ Processing 3+

I have not explored launching a program on an Android from a Processing app.
