Hi! I’m not so aware of what people are doing in data visualization with p5.js, but I know Dan made some videos about it
Also there was a workshop by Fathom (founded by Ben, the co-founder of Processing) and the code is available (but it’s from 2017 so not sure if it runs with the current version of p5.js)
